Plea sach ko (tripe recipe from Cambodia)

Ingredients


1 pound of tripe
2 pounds of beef steak
2 green onions
1 red onion
1 shallot
1 stalk of lemongrass
2 slices of galangal
8 Thai red chilies
3 teaspoons of dried red pepper flakes
10 sprigs of mint
10 sprigs of cilantro
10 kaffir lime leaves
1/4 cup of fish sauce
1/4 cup of jasmine rice
3 limes
Vegetable oil
Salt

Directions

Boil the tripe, let it cool then cut into thinly slices. Dry roast the uncooked sticky or glutinous rice in a small pan on medium heat until browned, stirring it occasionally, and once toasted, grind it to a powder. In a large skillet fry in vegetable oil the steak until medium rare, a few minutes on each side. Allow the meat to cool completely then mince it. Chop the green onions, the lemongrass and the kaffir lime leaves. Thinly slice the red onion and the shallot. Mince the galangal, the mint, the cilantro, and the red chilies. Add all the ingredients in a large bowl. Drain away any cooking liquid before mixing in the cooked meat. Combine with salt, red pepper flakes, the juice of limes, and the fish sauce. Add the toasted rice powder and mix very well. The salad is supposed to be fairly dry, which makes it perfect when served with a side of sticky rice and sliced cucumbers.
